Think about how crazy this is: San Diego County is literally giving residents free air purifiers because of the ongoing Tijuana sewage crisis. When government is handing out air filters so people can breathe in their own homes, you’ve gone far beyond an environmental nuisance. If we can’t get this under control, why are we trusting any farm products?

Full video for a simple $5 (per person, not including the cost of electricity and the stove) meal - crispy chicken, golden potatoes, and a finishing butter. This essentially turns a few basic ingredients into something you’d happily pay $25 for at a restaurant.

Here's a little steak trick - add flavor while the steak rests. The surface is still hot, so the fat and juices are flowing (a river of flavor), and that heat blooms garlic, herbs, pepper, and butter while carrying flavor across the crust and into every little crack. I always season before cooking for penetration, then finish with flavor while resting for intensity.
