The fact you removed the skin says you don't know anything about cooking fish. Remove the scales and eat the skin. It's the best and healthiest part. Sometimes there is a thick layer of delicious fat just under the skin.

Thats is the worst suggestion I have ever seen. You cook the side you want presented first- among other things… frozen butter, no, EVOO, yes. Leave skin on, don’t have to eat it, if you must remove it, do it after its cooked.

If you don’t like eating the skin as some suggest (due to the extra fishiness), use a sharp knife to remove that darker brownish meat layer you can see that is just under the skin before you cook. Thank me later.

Appreciate the smooth skin-removal hack with the microplane—clever for certain recipes! That said, most chefs and nutrition folks actually recommend keeping the skin on (especially when pan-searing skin-side first). It protects the flesh, keeps the fish super moist, crisps up beautifully for amazing texture, and contains a ton of the omega-3s + collagen people eat salmon for. You can always peel it off after cooking if you don’t want to eat it. Either way, looks tasty—nice sauce base too!

If is a good piece of salmon, nothing else than a pinch of salt is needed. And FFS do not throw away the skin, sear it proper and enjoy that crispiness.

The best way to cook fresh salmon is to soak a 1 lb chunk of salted beef overnight (12-16 hrs) in water. Drain and rinse out into a pot and boil for and hr and add potatoes. Continue boiling 30 minutes. Then add the salmon chunked with skin on and boil another 15-20 minutes until the potatoes are done and the salmon is cooked through (light orange and chunks still intact) It is the juiciest and tastiest salmon you will ever eat. The skin adds the omega fats into the potatoes, salmon and broth. Save 2 cups of the broth and make a chowder with any remaining salmon and potatoes (cube them up) left over adding clams, mussels, scallops and shrimp, chicken broth base and some corn starch with water to thicken. The salted beef accentuates the flavour of the salmon, anything from the ocean should be cooked with copious amounts of salt to bring out those flavours and tastes. I ate this throughout my childhood once a week as we fished the Atlantic as a family enterprise. Thank me later. Ancient Mariner
