I remember being young and terrified of bees but one day during Mass, a bee flew in and literally landed on the pew beside me right at the start of the service. It then didn't move the whole time. Stay for the whole thing...maybe sleeping? Then as Mass ended, it up and flew away. I named the memory, "the bee who came to Mass" as a little one and I just never forgot it. Haven't been as afraid of them since. ❤️

What's your point? Two non-rational animals saw Jesus before the shepherds and magi did. Isaiah foretold them. They will tell the story themselves in heaven.

True story: Years ago, I was sitting alone in front of the tabernacle in our very large parish. It was early evening, and I became aware of a presence. I looked to my right and was startled to see Father’s cat sitting next to me looking up at me. I skritched his head, he crawled into my lap, started purring, and drifted off to sleep. He awoke sometime later, jumped off, and started wandering through the parish. I continued reading Scripture, and a few minutes later looked up: There was the cat curled up on top of the brass metal tabernacle. We know cats are heat-seeking creatures, and here in a parish that seated 800 he chose the cold tabernacle. And me without my camera.

To the question of non-rational souls. I have a disagreement with the great Doctor of the Church. I am well aware of how unworthy I am to even think it, but here goes. It is certain that man is made in the image of God and has eternal life. It’s clear that we could be the only species with an eternal soul, but if the evidence against animal souls being eternal is lack of rational thought, I am unconvinced. I will give two examples. A neighbor of mine had a dog who would bark affirmatively if you asked the question, “Do Chinese people cook in a wok?” It would then run to fetch the leash. Obviously a cute joke, but the dog clearly understood the word “walk” and took a rational next step. Second example. Every morning at the crack of dawn, my cat comes and stands on my chest. She meows at me to wake up and feed her. I ignore her and she lays at my feet. After a while I say, “Should I feed you?” She meows, jumps off the bed and runs to her bowl. Many other people owned by pets can probably recount similar stories. What makes thought rational?

Got souls, not rational souls. Humans get the rational soul directly from god after some point in pregnancy according to Saint Thomas Aquinas.

Non-rational souls do not mean God does not or cannot preserve them in a new heaven and earth. If we find joy in the company of saints in Heaven, then doesn’t it follow that heaven is not the Beatific Vision itself in isolation? If joy in others, why not animals? It’s not Dogma.

Phooey! I don’t think rationality is the measuring stick of validity, worthiness of respect or being one of G.d’s children. We are the destroyers, not them. Maybe we should desire to have souls like them, rather than of “rational souls”. I’m sure He loves them.
