Sukari Nguru (widely known as jaggery in English) is a traditional, unrefined dark sugar made directly from raw sugarcane juice.Unlike commercial white sugar, it does not undergo chemical bleaching or heavy processing. Instead, raw sugarcane juice is boiled in large open pans until it thickens, pours into molds, and cools into solid, rock-like blocks. Some African rivers have an almost unnatural emerald green colour, yet the water can be crystal clear and completely free of pollution or an algae bloom. The colour can come from a combination of geology, dissolved minerals, microscopic mineral particles, water depth, and light scattering. In clear water over pale rock or sand, sunlight can produce an intense emerald or turquoise appearance. But is that what we’re seeing in this particular video?
