Sukari Nguru (widely known as jaggery in English) is a traditional, unrefined dark sugar made directly from raw sugarcane juice.Unlike commercial white sugar, it does not undergo chemical bleaching or heavy processing. Instead, raw sugarcane juice is boiled in large open pans until it thickens, pours into molds, and cools into solid, rock-like blocks. Because the nutrient-rich molasses is not removed during this process, it retains its signature deep brown color and a distinct, rich caramel-like flavor.

The colour can come from a combination of geology, dissolved minerals, microscopic mineral particles, water depth, and light scattering. In clear water over pale rock or sand, sunlight can produce an intense emerald or turquoise appearance. But is that what we’re seeing in this particular video? Is the river actually this intensely green, or has a filter or colour grading been applied?
