Ever had crème fraîche scrambled eggs? In my opinion, scrambled eggs are a lot like steak. Cook them too much and they’re just not as good. Cook them slow and low with the addition of a tablespoon of sour cream or crème fraîche and it’s an entirely different dish. Use medium heat, melt a little butter and keep scraping and moving the eggs constantly. If you omit the crème fraîche or sour cream, you just end up with soft scrambled eggs, which are still quite delicious. It’s ok if they look a little wet. That’s how you want them.

We had so many questions about water glassing eggs, I made a video about it. 🥚🍳✨️ How to: •Fill one ½ gallon jar with 14-17 clean eggs (depending on size) that have their bloom intact. •Mix 4 cups of water with 1 Oz pickling lime. •Pour lime/water mix over eggs, and make sure they're completely covered. •Screw lid on. Notes not addressed in video: •Obviously the fresher the better. We're currently eating through •February/March eggs & they're still delicious sunny side up. •The longer the sit the weaker the yolk will get, but they'll still make great scrambles.

Over easy eggs were the first eggs I ever made and I hated breaking the yolks. The trick is to keep the yolk as close to the pan as possible when you flip it. A lot of people suggested I try steamed eggs in my instant pot and I discovered there are definitely some advantages. I only need a cup of water and since I use filtered water, it’s a lot less taxing. Peeling the eggs is about 20% easier than my method. The biggest drawback I can think of is it might be harder to get the eggs exactly how I want since I’m cooking in one minute increments. For example, these three minute, low pressure eggs had perfect jammy centers and I wanted it a little bit runnier. Will two minute eggs get it there or will it be too runny. I guess I’ll have to see.
