The Lancaster cast iron skillet is the best thing to ever come out of a pizza box. It is the Rolls Royce of American cast iron. Hand crafted and polished, this skillet is as smooth as a baby's bottom and 15% lighter than the pebbly surfaced and cumbersome Lodge. This polished style of lightweight cast iron was popularized by a company named Griswold. Griswolds graced America's kitchens from 1865 until the 1950s but the non-stick cookware revolution and management problems led to Griswold's demise. Swordfish is like chicken and pork had a baby… except somehow the baby tastes way better than either one. It has that thick, meaty bite that almost doesn’t register as fish. Cooked to about 130–135°F, it stays incredibly juicy and tender inside. It’s basically the steak of the sea. Cook over hot charcoal for 6 to 7 minutes on one side and 3 to 4 on the other. You can do this in a frying pan as well with a little bit of butter. You don’t need any special seasonings, but I do like a little bit of Old Bay on mine. It’s a good time of year to buy swordfish. I scored this piece for $13.99 a pound.

Is it better to crack an egg on a flat surface or on the edge of something? Cracking an egg on a countertop or cutting board tends to make a cleaner fracture and pushes the shell inward less aggressively, so you’re less likely to get little shell fragments in the egg. Cracking it on the edge of a bowl or pan can drive shards inward and occasionally puncture the yolk. I'm a flat egg cracker.

I’m upset. Because it took me 57 years to discover that homemade sour cream is incredible. You must try this! Not only was it easy to make, I got to choose the cream that went into it (A2). Simply mix 1 tbs white vinegar with 1 cup heavy cream, stir, cover with cheesecloth and refrigerate for 12-24 hours. The result has the subtle sweetness that you taste in cream and it’s the smoothest thing ever. I had to stop myself from eating it right off the spoon. I had planned to let it sit at room temp for 4 hours to accelerate the thickening and then refrigerate but I forgot and left it out (69°) for 14 hours but it turned out perfect! You can make your sour cream probiotic by adding some live yogurt or kefir to cream instead of vinegar and intentionally leave it at room temp until thickened as desired. That’s a future project for me.

Some folks wanted to know how the pan is faring for me. Here’s my first steak. The number eight will hold it, but you’re going to get a little bit of splatter, which any carnivore worth their salt knows a little collateral splatter is just the price of doing business. I tried this on my glass stove top, but I probably wouldn’t have if the stove weren’t already scratched up. I noticed the website said this payment would work on glass stove tops, and I wanted to give it a whirl. Just please try not to slide your pan if you do try this at home.

Thousand Island 1/4 cup sour cream 3 tbs stevia ketchup 2 tbs diced pickles Dash of paprika, garlic powder, onion powder and a pinch of salt That’s enough dressing to put between your layers and top for two “sandwiches” like this.

I barely use my cast iron cookware anymore because of how well my carbon steel performs and how easy it is to maintain. 1) It’s 1/3 the weight of cast iron 2) I don’t have to worry about excessive iron levels 3) The handle doesn’t get blazing hot 4) I don’t have to baby the seasoning. I can scrub it with steel wool and cook non stick eggs with it the next day Just make sure it’s completely dry to avoid rust! Links below
