This seems very simple. What are some pros/cons of a big submersion tank with a heat exchanger?

Well, I prefer the hydro machines to reduce the complexity. An immersion tank is a whole bunch of added equipment, two fluids, two pumps. If you can just start with a water cooled machines you eliminate complexity.

I’m assuming hydro machines just cost more?

Not really. They seem to run better too with more consistent chip temps. A previous challenge was that hydro machines required 3 phase power. Now there are single phase powered machines available.
