🥦CREAMY LEMON BROCCOLI CHICKEN SALAD Total: 1055 calories, 109g protein, 36 net carbs 4 servings: 264 calories, 27g protein, 9 net carbs This is one of those ridiculously easy healthy recipes that is so easy and SO good. It’s got crunchy broccoli, finely diced chicken, pistachios, and a creamy lemony dressing that brings things together so nicely. I’ve lost over 140lbs eating high-protein, low-carb meals like this, and this is exactly the kind of easy healthy recipe I make on repeat. This would be great as-is, scooped with low-carb crackers, stuffed into wraps or lettuce cups, or piled onto sourdough if you’re not watching carbs too closely. Here’s how I made it: 1️⃣ Add 3-4 cups of finely chopped broccoli (florets + tender stems) and about 2 cups chopped or shredded rotisserie chicken to a large bowl. Use whatever ratios you like here, just make sure that it’s super finely chopped. Because you want a little bit of everything in each bite. 2️⃣ Add 1/2 finely diced red onion and a large handful of fresh chopped parsley. The parsley is doing a lot of work here, so don’t be shy! Add it to the bowl. 3️⃣ Make the dressing. Italian Stromboli Ingredients: Pizza dough 2 Tbsp melted butter Pizza seasoning (or garlic powder and dried basil) 4 Tbsp grated Parmesan cheese, divided 6 slices mozzarella cheese 20 slices deli-style pepperoni 3½ ounces deli-sliced salami 3 ounces prosciutto 6 slices Provolone cheese 1 large egg, beaten with 1 Tbsp water Marinara sauce, for serving Preparation: Preheat the oven to 375°F (190°C). Roll out the pizza dough on a sheet of parchment paper. In a small bowl, combine the melted butter and pizza seasoning. Brush half of the butter mixture over the rolled-out pizza dough, leaving a 1-inch border around the edges. Sprinkle 2 tablespoons of the Parmesan cheese over the buttered dough. Layer the mozzarella, pepperoni, salami, prosciutto, Provolone evenly over the dough. Brush the egg wash over three of the dough borders, leaving one long side dry. Starting from the wet long side and moving toward the dry long side, roll the stromboli tightly into a log. Pinch the seam closed and carefully tuck under the short sides of the dough to seal. 🔥CRISPY SMASHED POTATO BOWLS WITH MEDITERRANEAN CHICKEN I’ve lost over 150lbs eating meals like this. High in protein, packed with flavor, and satisfying enough that I actually look forward to my healthy meals. Here is how I made it: a large bowl, add 2lbs boneless, skinless chicken thighs. Drizzle with 1tbsp olive oil, then squeeze in the juice of 1 lemon, 4 minced garlic cloves, 1.5 tbsp tomato paste, 1 tbsp paprika, 2 tsp dried parsley, 1 tbsp garlic powder, 1/2 tbsp onion powder, 1/2 tsp chili flakes, and a couple generous pinches of salat and pepper. Toss well, spread onto a parchment lined baking sheet, and bake for 30-35 mins. You can also airfry this if you want easy airfryer recipes! 2.For the potatoes, bring a large pot of salted water to a boil and cook 1.5lb baby Yukon Gold or fingerling potatoes until fork tender. I used the Anyday containers and just did this part in the microwave to make it much faster. Transfer to a parchment lined baking sheet and gently smash each potato. Drizzle with a generous portion of olive oil, season with 1.5 tbsp garlic powder, 2 tbsp dried oregano, salt, and pepper, then roast at 425F for 30-40 mins until deeply golden and crispy. You may need to flip these. As soon as they come out of the oven, top with freshly grated Parmesan. 3.Make the sauce by combining 2 cups Greek yogurt, 1 grated Persian cucumber, 1/4 cup chopped fresh dill, 1 grated garlic clove, the juice of 1/2 lemon, 1 tsp olive oil, salt, and pepper. Mix well. 4.For the onion salad, thinly slice 1 large red onion and add it to a bowl. Add 4-5 tbsp finely chopped fresh flat parsley, the juice of 1/2 lemon, 2 tbsp sumac, and a generous pinch of salt. Here’s how I made it: Protein Flatbreads: 2/3 cup gluten free all purpose flour (or regular purpose flour) 2/3 cup Greek yogurt 1/2 tsp baking powder A couple generous pinches salt Optional topping: Olive oil + Everything Bagel Seasoning Steak: 1.25lb skirt steak 1 tsp olive oil 1/2 tbsp paprika 1/2 tbsp garlic powder 1/2 tbsp oregano Salt & pepper Yogurt spread: 1 cup Greek yogurt 1 minced garlic clove 3–4 tbsp finely chopped dill Juice of half a lemon Pinch of salt & pepper Onion salad: 1 small red onion thinly sliced 4 tbsp fresh parsley, finely chopped Juice of 1/2 lemon 1 tbsp sumac Salt 1.Season your steak - drizzle with olive oil, add the spices above, mix well, then airfry at 400F for 10 mins. SUMMER SALAD IDEA: Mediterranean Chicken, Pistachio, & Herb Salad If you love mediterranean recipes and mediterranean food, and you want an amazing summer salad that hits all the right notes, then try making this easy salad at home. Its got one of the best flavor combinations, its so easy to make, and SO good. I love pulsing cauliflower into snowflakes here, it adds such a nice texture, and it’s almost like having couscous in the salad. Here is how I made it: 1.Lets prep the chicken first and let it marinade. Add 1lb of chicken thighs to a bowl. Drizzle with 1 tsp olive oil. Season with salt, pepper. Add the zest and juice of a small lemon, 2 tbsp tomato paste, 1 tbsp oregano, 1/2 tbsp garlic powder, and 1/2 tbsp harissa spice or paprika. Mix really well. Ideally let this marinate for 1-2 hours, or you can also just pop it into the oven at 400F for 30 mins, or your airfryer at 400F for 20 minutes. 2.Prep your salad base. I finely chopped 5oz arugula and added to a salad bowl. I also pulsed the florets from half a head of cauliflower in a high powered blender or food processor until they have a super fine consistency. Add those to the bowl with 4 thinly sliced Persian cucumbers, 1/2 large red onion finely diced, 3-4 scallions thinly sliced, half a pint of cherry tomato. You can add as many fresh herbs you want here. At a minimum I recommend finely chopping a large handful of fresh parsley (yielding about 3/4 cup), but feel free to add fresh mint and cilantro to this as well. 3.Dice up the cooked chicken and add it to the salad bowl, along side 1/4 to 1/3 cup of toasted pistachios. If you dont like pistachios, you can always swap it in for pecans or walnuts. 4.For the dressing, in a jar add 1/4 cup olive oil, the juice and zest of a large lemon, 2 tbsp tomato paste, 2 tbsp red wine vinegar, 1 tbsp dijon mustard, salt, pepper, 2 tsp oregano, 1 tsp onion powder, and a pinch of aleppo pepper flakes. Is this really the 4th best spread or dip in the world? Guacamole was recently ranked as the 4th best sauce in the world, in my book, it’s a very close battle with hummus for that number one spot. Let me know which you would pick! I like to make my guac a mix of creamy but chunky, and also left out tomatos, which are typically in guac, so feel free to include them, and also make any substitutions you like to make your own version. This is usually the way I do it for an easy appetizer that i know people will like, especially in the summer. Another preference is temperature! I like my guacamole on the colder side, so make it with avocados straight out of the fridge and serve right away for best results. Ingredients: ✅3 large avocados ✅1 large handful fresh cilantro (about 1/3 cup finely chopped) ✅1/2 large red onion, finely diced (finely diced is key!) ✅1 jalapeno, finely diced (remove seeds if you dont want it spicy) ✅ 2 garlic cloves, minced (use fresh but jarred works, too) ✅1 lime ✅1/2 tsp cumin ✅2-3generous pinches salt Here is how I made it: 1.I prefer cold avocados so store them in the fridge for at least 2 hours prior to starting. 2.Grab a board or a bowl - i did this right on the board. Finely chop 1 large handful fresh cilantro which yields about 1/3 cup. the cilantro, add 1/2 finely diced large red onion 1 finely diced jalapeño (remove the seeds if you dont like it spicy!), and 2 freshly minced garlic cloves. 4.Grab your 3 large avocados, remove the skin and pit and add to the rest. 5.Squeeze the juice of 1 small lime. If you want more lime-y you can add more lime after you taste it later. 6.Add 1/2 tsp cumin, a couple generous pinches of salt, then mash using a fork or utensil. High Protein Broccoli Feta Soup 🥦 If you thought soup couldn’t be high protein and taste incredible, you’ve got to try this! Full recipe: 985 calories and 79g protein Each serving (4): 246 calories, 19.5g protein, 10g carbs This protein packed broccoli feta soup is as good as it gets. It’s got roasted broccoli and feta two of my favorite protein hacks: some creamy cottage cheese and bone broth. Soup Ingredients: 5 cups (450g) broccoli florets, cut small so they roast evenly 2 cups of baby spinach 1 small quartered yellow onion 4 garlic cloves 1-2 tbsp olive oil 3 cups bone broth 1/2 cup cottage cheese 6oz feta cheese The zest and juice of 1/2 lemon 1 tsp dried oregano 1 tsp chili flakes Salt and pepper to taste Garnish: Fresh dill & finely shredded manchego cheese Here is how I made t: 1️⃣ Preheat your oven to 415°F. 2️⃣ Cut your broccoli into smaller florets so they cook faster and roast up evenly. Dont use large chunks. 3️⃣ Toss your broccoli into an oven safe dish along with your quarterly onion, and fresh garlic. Drizzle with olive oil, add your oregano, chili flakes, salt, and pepper. Place your feta in the corner. Roast for 30 mins until roasted and slightly crispy. Time varies by oven, so keep an eye! 4️⃣ Add your roasted veggies to a blender with the bone broth, cottage cheese, baby spinach, and lemon zest, and juice. Blend everything until smooth and creamy. 5️⃣ I its cooled down, warm it up in in a pot, then taste and adjust to make sure it has enough salt and lemon juice.
