Use expansion foam to fill the gap. Sand to level the surface and the cover with mud

No, this ends up with a lump in the wall , you cut a patch then use a piece of wood screwed across behind the hole , screw in the patch ,then surface fill , when painted you cannot see the repair , very simple , very quick
