for some reason I always thought bagels were difficult to make. I actually think I could do this even tho I hate baking. can a friend from New York send me a gallon of your New York tunnel tap water

I can’t stand this guy but he has the best recipes. Bagels are easier than the pandemic breads people were making. I really need filthy rusty toxic New York tunnel tap water to make these bagels properly tho.

I've looked into this and apparently you can buy the minerals to supplement your own water, but also adding barley malt to the water is a step

Its the high gluten flour and malt syrup for the dough and the boil that do it- a small amount (1-2%) of diastatic malt and other dough enhancers would also help. Another items is probably the steam injected ovens...

would a pirex bowl of water in the home oven help at all during baking

I like this recipe. The hardest thing to find was the barley malt syrup but it really makes a difference

Made em a few times and the downside if they come out mediocre (not sure what I did wrong) is they turn out “bread-y” rather than chewy, like rolls but with more steps

This is very helpful. How do I get them chewy and not doughy bready I wonder. (I know this answer, it’s my own advice with cooking. make them 20x and you’ll be an amateur master)
