If the Earth is spinning & a hovering object is "carried by the force of the rotation", why does the wind blow in every direction? If the object isn't carried by the rotation, why doesn't it land on a different spot?

I have a freeze drier for preserving food. It has to reach 500 mTorr in order to suction out the ice (as vapor). The only way for it to achieve that is to have a door that vacuums shut and can't be opened again until I release the pressure. Just anecdotal evidence. Mhm.
