@FredDiBiase247 There are multiple different types of ginger. Maybe you should be asking the store where they are sourcing it from because organic ginger still grows “stupid big dumb pieces”. Where it comes from will be the biggest determining factor of color and size. Duh.

@FredDiBiase247 One of the ginger is old, when you have ginger that have a lot of time storage it will lose that yellow bright color. The other wan is more fresh that's why is more bright yellow. He is just trying to get more views.
