Heat olive oil in a pan. Sauté the ground beef until browned. Add the blended onions and garlic, stirring until fragrant. Pour in the cognac and let it simmer for 1-2 minutes. Add the blended tomatoes, tomato juice, cinnamon stick, bay leaf, salt, pepper. Lower the heat and let the sauce cook for 25 minutes. I love this dish.. we make it mostly in the summer when our eggplant and other veggies are growing in our garden.

Sorry to disagree, but this food isn't Greek based, it's Egyptian, made from fried eggplant,with added minced meat, then we cook it completely together with red sauce, the girl in the video chose to put bachamel on top of it, still, it's an Egyptian food, we cook it all the time.
