I got smack studio and would love to try the sprite software specifically! Is there any documentation on the different features and how to use them? I was only able to find soe videos but they don't seem to cover the full scope of what its capable of

Not currently, since capabilities of the tool are being discovered by artists frequently. We are in the process of making more detailed tutorials that should be released soon!

Besides being a great game development software, it seems to be a good sprite creation tool as well. Is it possible to export the image of each angle of bone movement in .png format?

You can export your full animations which include rotated pixel art- is that what you mean? You can also show/hide body parts before exporting if you're trying to isolate specific layers
