I learnt this working in Algeria. The works canteen used to do beer and dates as a snack. Someone i worked with was eating dates and he would prise open the date and remove the stone and look at the white skin inside. He opened six and two had little white worms.

You don't really have to cut open a date. Heck even a slight mould won't kill ya. Dates that are infected are very much obvious to the point where it's slimy upon contact and looks mashed or shrunken. Even so they are probably left for very long under extreme conditions. I have dates stored in a tropical country and could last for over a year in a non vacuum container.

if you mix sugar with water it is the perfect food for bacteria but if there is not enough water the sugar might instead kill the bacteria.
