The heart, or piña, of the agave is harvested after reaching maturity, typically taking 7-10 years. The piñas are then roasted in ovens or autoclaves to convert complex starches into fermentable sugars. After the cooking process, the agave is crushed, and the extracted juice, or aguamiel, is collected. This juice is then fermented, traditionally using natural airborne yeast or cultivated strains. The resulting liquid is distilled twice in pot stills, a crucial step to achieve the distinctive characteristics of tequila. The final product, categorized into various types such as blanco, reposado, or añejo, undergoes aging in wooden barrels to enhance its flavor profile. Strict regulations govern the production of tequila, ensuring adherence to quality standards and geographical indications.

What a process to make! I read that Tequila was first produced in the 16th century in the town of Tequila. I didn’t read that overindulgence is a bad idea for a 21st birthday.
