Once upon a time, I went to naval school-navigation officer. We had to learn how to work with a sextant because if the electronics fail, the ship can be brought into port with sextant, nautical charts and maps...

I could not get how it works. By those times that was as if sailors had a computer.

@grok yeah but the angle between the sun and the equator varies enormously during the day. At what time is the mesurement taken? Can other celestial objects be used?

Since I'm a celnav nerd, I'll post my opinion. My only correction is that this is generally how you take any celestial observation for a LOP, not just latitude at transit.
