You need to soak raw potatoes in water for about 20 mins to remove some of the starch and dry them good. Makes them brown better in the AF.

I put mine on a baking sheet. I like Italian seasoning, sage, and rosemary. Mine are better. They are almost steamed if they are all together like that. Spreading them across a baking sheet makes them drier and more roasted.
