Your washing off the starch. Some of the pasta water is added to the sauce so it coats the pasta. Don’t do this.

You do this to RICE, a Naturally growing food that needs to be rinsed before cooking. Pasta is MADE, It’s clean and the starches are a part of the product (and some the starchy water can be used in your spaghettis sauce to thicken and bind the sauce to your noodles
