A near-boiling shot of espresso pulled straight into a cold plastic cup can leach small amounts of endocrine-disrupting compounds (think Bisphenol A and its cousins) into your drink. It’s neat to see how butter actually changes color throughout the year based on what the cows are grazing! Butter from cows grazing fresh green pasture is often more yellow because of higher beta-carotene in the grass, while winter butter can be much paler when cows are eating stored feed. Grandma knew butter was a health food and that’s why they guilted her into using vegetable oil junk with ads saying real housewives use Crisco and what not… Crisco entered American kitchens in 1911 as partially hydrogenated vegetable oil, and over the following decades those industrial trans fats became increasingly common while heart disease rates also skyrocketed. HMM. Almost seems like it wasn’t the butter!
