For the Bisque Olive oil 1 bulb of garlic (halved horizontally) Lobster shells and heads (chopped) 1 tbsp tomato paste ½ cup cognac Peppercorns Fresh thyme Water (just to cover) Make the bisque: In a pot, heat olive oil, sauté garlic and lobster shells. Stir in tomato paste; cook 2-3 minutes. Add cognac, flambé (carefully), and reduce. Add water, peppercorns, thyme. Simmer 35 minutes. Blend thoroughly and strain. Set aside.

For the Sauce 1 bunch wild garlic (separate stems & leaves) (or 2 cloves regular garlic, sliced) 2 tosp butter 1 red chili, sliced 1 cup cherry tomatoes, halved ½ cup white wine Salt 3 cups lobster bisque Olive oil (to finish) Chives (finely chopped) Lemon zest Make the sauce: In a large pan, melt butter. Add chopped wild garlic stems (or regular garlic), chili, and cherry tomatoes. Cook 5 min. Deglaze with white wine and reduce. Pour in the bisque, season with salt. Simmer.

Final Assembly Your favorite pasta (cook to ¾ time) Pasta water (as needed) Reserved lobster meat Wild garlic leaves Lemon zest, chives, olive oil to finish To finish: Add the undercooked pasta to the sauce with a splash of pasta water. Stir in wild garlic leaves, lobster meat, lemon zest. Toss gently to combine and finish with a drizzle of olive oil and chopped chives.
