Making Potted Meat from 1747

ever since i learned of Pemmican meat+fruit coated in tallow fat. i've found it fascinating how alot of ways of keeping foods fresh without fridges is of course. preventing bacteria just getting at it with a layer of oil, butter or dehydrating it with salt or drying it.

Spreadable meat from Québec called creton is very similar and so tasty. I make my own. So tasty, I've converted many people to it.

For those who prefer fish, this is an excellent and easy recipe for salmon rillettes.

My granda used to send me to the butcher for "potted heid" as he callled it. He loved it!
