ingredients: 2 (8-ounce) blocks mozzarella cheese, cut in half (4 pieces) 1 cup all-purpose flour 3 large eggs, beaten 2 cups bread crumbs we used olive oil while most recipes will say vegetable oil For the Nashville Hot Mixture: ¼ cup cayenne pepper 2 tablespoons dark brown sugar 1 teaspoon chili powder 1 teaspoon garlic powder 1 teaspoon smoked paprika

Instructions: Cut each block of mozzarella into 2 equal pieces. Place the flour, eggs, and breadcrumbs each in separate shallow dishes. Dip each mozzarella stick in the flour, then the egg, and then the breadcrumbs, ensuring it's fully coated dip each stick back into the egg and then the breadcrumbs again. This will help create a crispier crust. Heat oil in a large skillet or pot over medium-high heat. The oil should be hot but not smoking. You can test the oil by dropping in a small piece of breadcrumb; it should sizzle immediately.

We got ours to about 360 Carefully add the mozzarella sticks to the hot oil in batches, being careful not to overcrowd the skillet. Fry for 3-4 minutes on each side, or until golden brown and crispy. Remove the fried mozzarella sticks from the skillet using tongs and place them on a wire rack lined with paper towels to drain excess oil. Make the Nashville Hot Mixture: combine the cayenne pepper, brown sugar, chili powder, garlic powder, and smoked paprika. Add hot oil to the mixture and combine well. While the mozzarella sticks are still hot, toss them in the Nashville Hot Mixture until evenly coated. Serve immediately with ranch or blue cheese
