I can’t speak on this, but years ago I worked for an Italian family caring for the elderly parents. The daughters came to visit and made homemade spaghetti with homemade sauce and they used neck bones. I’d never seen that before or since. It was the best I’d ever had.

I think Id be fine as long as I didnt know what was in it until later.
