I did something like that using animation textures, a texture encoded in bw where each bar is less black, so they get automatically cutoff, giving the illusion of a segmented bar. The advantage of this method is that gives the artist freedom about the shape of the bar

That sounds like a professional workflow. But since I do everything myself, I simply hate jumping between graphics design software and game engine
