Im just wondering how they've managed to track the "selected brand" keyboard ... are they holding up some APIs from us devs?

It's certainly an intentional limit since they are doing CV with the keyboards and guardian room setup. Which hopefully means it'll become a feature eventually.

How did you sync up the coordinate spaces of the phone and the Quest? 🤯

By using the the Tracked Keyboard on the Quest and a Tracked Image (QR) that was placed next to the keyboard with the Phone (ARKit) and then shifting position and rotation(y) based on the offset delta (of the current and desired) to create alignment. Not perfect, but suitable
