What matters is what processing. For instance, adding poisonous colorings, preservatives, stablizers, and flavor enhancers. French fries are blanched and then flash-frozen. That's "processing." But there's nothing inherently dangerous about any of that. Adding titanium dioxide is a different story. BTW, if you pull a carrot out of the ground and rinse the dirt off of it, you're "processing" it.
