Despite what they write on the packaging, lets apply logic heren the steaks you show have white fat. This is is 99.99% likely GRAIN fed. Real grass fed beef has yellow fat. Please prove me wrong. I'm in the same boat as you. Or you think only heating releases the carotenoids ?
