Maybe too ambitious to make it into a game and only to show the power of UE5.

They never gave a reason. But you can play it if you downloaded it when it was available.

GTA 6 will never be like this because they had to add bubbles in the beer bottle.

That was scripted gameplay though. Not realtime physics.

UE5 has been really underwhelming thus far imo… most games are running horribly … lighting + specular highlights are overblown! GTA6 already looking better than all the big games using UE5!
