The first guy didn't cut through because the blade wasn't sharp. He just didn't swing hard enough. The failed cut is due to the drag of the blade sides in contact with the mellon peel, not the cutting edge. Same reason why cutting cheese is difficult with a wide blade.

the irony is that traditional japanese folding wasn't magic metallurgy; it was an ingenious workaround for inconsistent bloomery steel. the craftsmanship is impressive precisely because the inputs weren't.

Rubbish, look where the first man tried the cut, near stem which is the "thickest" part, where as other guy cuts near mid top, thinner skin/flesh..
