I believe should read 1/2 cup plus 2tbsp of vinegar correct?

I've been curious about making simple cheeses. Thank you for being so informative! I know plenty of local dairy Farmers nearby so I can get whole milk that's not been pasteurized get the most nutrition out of my cheese, right?
