I don't understand why aircraft speed is measured in Machs? There is a connection with the speed of sound in this dimension, but isn't the speed of sound different at each new point on the plane? Then why do we need Mach speed?

That's very fast, that kind of speeds and acceleration are only for machines I believe. The human body can't survive above a certain speed on earth (gravity).

Machs just velocity relative to the speed of sound in the local fluid. When the air is less dense, sound travels faster, so technically as you increase altitude wouldn’t you decrease velocity to keep a constant Mach?

This is not how the Mach number works. Mach 1 equals the local speed of sound, which is dependent on gas composition and temperature. It’s not always 761 mph, that’s only at sea level.
