For North and South America, the continents are actually associated with distinct tectonic plates, even though as you said, the Panama Canal is man-made. The case for Europe and Asia being different continents has more to do with culture and history; it’s not because of plates.

I think the difference between The Americas and Eurasia is that there’s a very clear and obvious border between NA and SA, whereas Eurasia’s border is mostly cultural. North and South America are 2 very distinct landmasses that are only connected by a little isthmus in Panama.
