According to a 2010 study by Mother Earth News, pasture-raised eggs can have up to 2–3 times more vitamin A and omega-3s compared to conventional eggs. Stress-free environments and reduced antibiotic use also contribute to healthier more nutrient-dense eggs. Over time, how the egg is stored and cooked also affects its nutritional quality. Fresh eggs retain more nutrients, especially if stored properly at consistent, cool temperatures. Don't substitute quail eggs for chicken eggs. Especially if you're concerned about the cost of eggs. It takes maybe 5 quail eggs to equal the size of one large chicken egg. It costs around $5 or so for 18 quail eggs. That means you're getting about 3.6 chicken eggs for $5. That's a rip off. Not to mention having to crack or peel that many eggs and quail eggs are not fun to peel. I'm not against quail eggs. I eat them. But I use them as an accent to soups and other dishes.

I prefer guinea fowl eggs for their better white-to-yolk ratio (almost 15% less egg white) and twice the cholesterol of chicken eggs.
