O copo impede que a massa do pudim caia de forma muito forte na calda e cause uma deformação na camada.

The glass stops the heavy batter from crashing into the caramel and messing up that perfect layer. Smart kitchen hack.

The glass is being used to displace/disburse the liquid as he pours it in to the mold so it doesnt cause the mixture to push or mix around what I am assuming to be agave nectar.

The glass acts as a gentle buffer it stops the thick batter from crashing straight into the caramel and ruining that perfect smooth layer. The mixture just flows around it instead. Classic pro kitchen trick

It breaks the force of the heavy custard pour so the delicate caramel layer stays perfect and does not get smashed or mixed. Classic pro move for giant pudims.

The glass breaks the impact so the caramel layer stays smooth instead of mixing.

So the custard doesn’t break through the caramel layer.

t wasn't supposed to fall maybe. the glass would leave a gap in the middle which would allow you to cut a slice or a piece easier.

If he pours it without the glass like that the honey might shift to one side

From my observation I think the glass in the middle was to prevent the liquid underneath to stay underneath because pouring straight would result to mixing

The Glass Breaks the Bubbles and allow laminar flow to not fold air into the batter as he pours it in, then it also leaves the caremel undisturbed.

Why not put it on the tray before you pour?
