Overall I was happy about how things turned out. If I were to do it again, I would raise the temperature a bit so the pastry was a little more browned. Beef Wellington was made with homemade djon mustard, homemade rough puff pastry, mushroom duxelles, spinach green crepes and prosciutto. Served with Bordelaise sauce (which was made from 20 hour reduction veal bone stock and Bordeaux wine reduction), pomme de terre (I attempted to make Michelin starred Chef Joel Robuchon's recipe.
