Adult eagles have mastered the art of plucking a fish from the water’s surface. I don’t think they like to get wet because they put forth so much effort in avoiding it. Pay close attention to this one’s talons as it passes the fish to its beak. It opens them one at a time and slides that poor fish right on out. Glad I’m not a fish.

While we were filleting squid from our swordfish trip that day, Preston hooked a jack crevalle. Out of nowhere, a giant Goliath grouper came up from the depths and tried to eat his fish. I quickly grabbed a 130 lb setup, rigged the jack as bait, and within seconds the monster came back and swallowed it. After an absolutely brutal fight, I finally landed the biggest fish I've ever caught from a dock! I estimate it weighed between 300–400 lbs (136–181 kg). Once the battle was over, the giant Goliath grouper was safely released back into the wild. 🎣🐟🔥

This is one of the more popular restaurant concepts in China nowadays, with dozens of chains around it: whole roasted fish, served in a large sizzling tray swimming in a bubbling sauce of your choice (like mala, pickled pepper, garlic, etc.), atop a bed of vegetables, noodles or tofu. And just like hotpot has its regional varieties all around China (Sichuan hotpot, Mongolia hotpot, etc.), so does roasted fish. We're now in a Xinjiang roasted fish chain restaurant called "Mayouyu" where they roast the fish in a Uyghur naan oven and serve the fish with... you'll have guessed it... Uyghur naans 😅 It's actually super good: to each their taste but I'm a much bigger fan of roasted fish than hotpot personally! I'm surprised this concept hasn't caught up in the West yet (to my knowledge): it's really awesome! It might have to do with the fact that people in the West aren't used to eat fish whole, instead always having it served filleted. They don't know what they miss!

For my wonderful wife's birthday today, my present is: fish 😅 But not just any fish: a Malaysian Empurau, from the jungle rivers of Sarawak on the island of Borneo. The Empurau fish from Sarawak, whose name in Chinese - "忘不了" (wang bu liao) - means "unforgettable", is so special not only because it is rare, but because it's probably the only fish in the world which native diet consists of fermented fruits: fruits that fell from jungle trees down in the rivers where it lives. As such its meat has a subtle fruity sweet taste. It is also one of the only fishes in the world with edible scales: as you can read, one of the dishes prepared from the fish is "salt and pepper Empurau scales". Here in Kuala Lumpur we're paying RM 1,888 for 1 fish (about $430), which is actually a very good deal, these fishes often cost double or triple this price. It's more affordable in this restaurant (aptly named "unique seafood") because it's one of the only places in the country that sustainably raise empuraus in their own tanks. So not only it's cheaper but the fishes are much fresher too, and we're not depleting wild river populations. Verdict? According to my wife, who is a major foodie, it's the best birthday present she could have received 😊 And yes the fish truly is delicious, hands down the best fish I've had in my life (and I eat a LOT of fish): "unforgettable" is right!
