We can know these things, I think: Our perception is by no means "true" in an absolute sense. We have a limited range of sensors, and our brain heavily edits the signals they receive to construct our auditory and visual experience. However, what we end up with is good enough to be useful the overwhelming majority of the time. In other words, there must be some underlying accuracy.
