🥕MEDITERRANEAN ROASTED CARROTS If you love carrots, and my last few mediterranean roasted carrots recipes, you will love this one! Its served up over a whipped herby yogurt spread that takes it to the top! This has a mix of crunchy ,creamy, sweet, and tangy in each bite, and its the perfect healthy salad, appetizer, or make it a meal by adding some protein like chicken, shrimp, or a white fish. Ingredients 2lbs carrots 2tbsp olive oil 1 tsp smoked paprika, 1/2 tsp garlic powder, 1 tsp oregano, 1 tsp Aleppo pepper or chili flakes Salt & pepper to taste Herby Yogurt Tahini Base 1 cup thick greek yogurt 1/4 to 1/3 cup tahini Zest and juice of a small lemon 1 garlic clove Small handful fresh dill (about 2 tbsp) Small handful fresh parsley (about 2 tbsp) 1 tbsp olive oil Toppings: 3 tbsp crushed walnuts or pecans 2 tbsp finely chopped fresh herbs (I love adding a mix of dill, mint and parsley 1-2 tbsp honey drizzles 1oz feta crumbled Aleppo pepper or chili flakes Here is how I made it: 1.Preheat your oven to 450°F. 2.Peel 2lbs small carrots and cut any thick ones in half lengthwise so the carrots all roast evenly, this is key! 3.Toss the carrots with the olive oil, salt, spices. Spread them evenly across a baking sheet. Roast for 18-20 mins until the edges are nice, blistered, and softened up. 4.For the base, whip the greek yogurt, garlic, fresh herbs, and olive oil until smooth with the juice and zest of a small lemon. Give it a taste and adjust with more salt or lemon if you like, and if you like tahini, feel free to drizzle in some more! 5.Spread your whipped yogurt on a plate, add the warm carrots on top, then top with some crushed walnuts (or pine nuts or pecans), some more fresh finely chopped herbs, some feta cheese crumbled, chili flakes, and a little drizzle or two of honey if you like. Listen, green juicing - should you do it, or leave it? Never mind the video attached, its just for entertainment purposes. The video shows a woman who goes to an [organic] farm and plucks fresh green leafy veggies, adds turmeric, lemon and ginger and makes a "green juice" which is claimed to be tasty and healthy. But what I would really want to discuss today, is if you really need to "green juiced detox" for wellness. No opinions here, no hearsay, just pure science of it. Green juicing is a detox practice. But none actually knows what is getting detoxed. An organ? An organ system? The body? No idea. The whole body is already getting detoxed by liver and kidneys and they do a wonderful job of it. Similar to "who watches the watchmen," line, should you "detox the detoxers?" For that, one must realize that detox is not a legit medical science word or practice. Detox is a wellness quackery term created to expand business oppurtunities. You have detox powders, detox tablets, detox capsules, detox practices (such as massages, oil pulling through nose, enemas, exposing anus to the Sun called 'sunning,' and so much more) and yes, detox juices. Detox is there is grab your hard earned money. A green juice or any type of detox for that matter does not help you prevent or treat any disease known to humans. The only thing getting detoxed with a detox is your bank account. The dubious practice of detox. Products that promise “detox” are a sham. Yes, all of them. Now the green juice thing. Be careful of what you put in there to blend, because your real detoxers - the liver and kidneys have to work extra to relieve you from the stress of it all. Green leafy veggies blended together is a dangerous thing. Many green veggies are rich in oxalates - like spinach, lettuce, celery and beetroot. Excess of oxalates can harm your kidneys if they get overwhelmed with the work-overload - like in this case where a woman developed kidney failure after green juice cleanse. "Green Smoothie Cleanse" Causing Acute Oxalate Nephropathy This is not an isolated incident. There are many reports in published medical literature that has reported kidney injury and kidney failure due to green juicing. Here are some of them. ➡️Oxalate nephropathy due to 'juicing': case report and review ➡️Acute Oxalate Nephropathy Caused by Excessive Vegetable Juicing and Concomitant Volume Depletion ➡️Acute Kidney Injury in a Patient Engaged in Vegetable Juicing And that is not all - sometimes, fresh green juicing, especially directly from the farm (like what the lady in the video does) can transmit really weird parasites - like that was seen in Korea. Many people developed an infestation from flatworms that affected their livers due to green juicing. Does green juicing do anything beneficial at all, to human metabolism and hence wellness? A randomized controlled study (which is a very good design methodology to identify effectivenss of an intervention) showed that green juicing was an absolute waste of everyones time. The authors stated that "Together with an analysis of previous works, we suggest that green juice did not cause an improvement in metabolic function and there is a need for further research on this issue." Bummer! If you are going to do a Green juice to "detox" your body, know that you are wasting your time and resources and potentially exposing your real detoxing organs to toxic danger. Stay informed, and stay safe!
