Ingredients, Serves 6: 12 Ontario eggs 2 Roma Tomatoes - diced 1/2 Red onion - diced 2 Avocados 1 Jalapeño - deseeded and diced 1 bunch Cilantro - chopped 1 Lime - juice only 2 cups Cheddar cheese - grated 6 strips Bacon 6 Hash browns 2 tablespoons Butter 2 teaspoons Olive oil 1 tablespoon Salt 2 teaspoons Pepper 6 10" white tortillas

Guacamole In a large bowl mix together your avocados, 1 tablespoon diced jalapeños, 1 tablespoon chopped cilantro, and the juice form one lime. Mash that all together with a fork until it's evenly combined but still chunky. Season with salt and pepper. Salsa In a medium sized bowl mix together diced tomatoes, red onion, cilantro, and jalapeños. Add olive oil, salt and pepper then mix throughly.

Preheat your oven to 400f. On a baking tray lined with parchment paper add your bacon strips and cook in oven for 15-20 minutes or until bacon is crisp. On a tray with tinfoil add your frozen hash browns and cook as directed on package. In a large pan on medium heat add olive oil and eggs. Stir slowly with a spatula. Once eggs are almost cooked add your butter and remove from heat. Season with salt and mix well to combine and set aside.

Assembly: Place one tortilla down on your work surface. Add one tablespoon of guacamole and spread it evenly. Add two heaping spoonfuls of your cooked eggs. Then add hash browns, bacon, salsa, cheese and hot sauce which is optional. Fold in the sides, then roll your tortilla as tight as possible for the perfect burrito. Sear on medium heat in a non stick or stainless steel pan until golden brown on all sides. Enjoy!
