If you watch the movie they timetravel from the 80’s into 2017. But Arnolds terminator didnt time travel. He waited 30+ years as time went by and let Sarah and Kyle reunite his timeline. His flesh aged. It’s all in the movie if you watch it.

It’s just human tissue. His frame doesn’t age. But the skin and hair do to help him blend in. That’s the point of making him look human in the first place.

T-800 units, based on whats said in the first movie, were suppose to have a kind of organic matter used to emulate flesh to such a degree that it not only feels human but bleeds and sweats. This covering might just be subject to the same kind of cell aging that human skin and hair undergo. It certainly wouldn't change the fact you have a hardened machine underneath that covering that can still hit with the force of a truck.

The flesh is actually organic. The machines presumably took real human DNA, and grew all the visible organs of a human around the T-800, which includes the hair. His hair follicles would've aged and turned gray because that is in its DNA. In the motel scene in T1 the Terminator supposedly smells "like a dead cat", meaning the meat is organic and can rot. I guess the only unexplained part is how the biological parts sustain metabolism if the Terminator doesn't eat organic sustenance.

So Terminator explained they have skin sweat bad breath it would be safe to think the skin and hair can age considering theyre based upon infiltrating us sometimes for extended periods of time.
