Extra virgin olive oil works like ibuprofen. Dr. Federica Amati explained that it inhibits the same COX-2 pathway that drives inflammation and pain. The sharper and more peppery the oil (that scratchy throat feeling), the higher the beneficial polyphenols. A landmark 2005 study in Nature found that oleocanthal in fresh extra virgin olive oil has an ibuprofen-like anti-inflammatory effect. About 50ml of high-quality EVOO delivers roughly 10% of a standard 200mg ibuprofen dose. One of the simplest, tastiest, and most accessible daily habits for fighting chronic inflammation.
