That’s Arum, we locally called Kochu. It grows heavily in marshlands and flood-prone areas across Northeast India, West Bengal, and parts of Asia where water gets stuck. It's incredibly rich in iron and super tasty when cooked right! Just a heads up for beginners: it contains calcium oxalate crystals which make it very itchy, so it needs to be boiled with something acidic (like lemon, tamarind) to safely neutralize the itch before eating.
