Here's how to break down what's called ultra-trimmed tenderloin (filet mignon). This one was a bargain at $15.99. You can also get something called PSMO tenderloin (Peeled, Side Muscle On). You get about 10% less steak in PSMO, more fat and more silver skin. It has a skinny muscle that's heavily fatted and runs alongside the tenderloin and tapers and stops about 3/4 of the way down. This usually gets very easily pulled off and turned into ground beef or a really tasty stir fry. PSMO can sometimes go for $10/lb during the holidays if you can find it but the ultra-trimmed is so easy to break down, anyone with a sharp knife can do it. I could have got 10 steaks for $6.25 each out of this but I chose to get a roast and 6 steaks. I'm not even counting the filet tips and little bit of scrap.
