Honey Jalapeño Fried Chicken

Do you have an alternate way to use fresh jalapeños? Got a million in our garden?

Pickle them.. use for sauces and dressing (jalapeno ranch.. aji verde etc).. jalapeno poppers..

I think we always make the mistake of not having enough oil where what we fry hits the bottom and doesn’t kind of float. Is that something that you avoid?
