Not for filet mignon. For most other cuts, yes. I like a ~medium rib eye because it has fat that needs to render. Filet does not.

The problem is it’s cooked on direct heat. Cook off direct heat and then sear. Or vice versa. Anyone who cooks steaks on top of heat from beginning to end are idiots. Including restaurants

I like mine a little more done on the inside. A reverse sear method would cook the inside a bit more while still having a nice crust on the outside.
