SLOW COOKER BEEF BRISKET PASTA Ingredients 1.2 kg beef brisket ½ tsp salt 1 tsp black pepper 2 tbsp extra virgin olive oil 1 brown onion, finely chopped 3 garlic cloves, chopped 400g tin diced tomatoes 3 tablespoons tomato paste ⅓ cup red wine 1 cup beef stock 1 tablespoon dried Italian herbs 350g pasta (any kind you like) To serve: Grated Parmesan cheese Fresh parsley Method: Pat the beef brisket dry and season with salt and pepper. Heat olive oil in a frying pan over medium-high heat. Sear the brisket on all sides until well browned. Transfer the seared brisket to your slow cooker. Add onion, garlic, tinned tomatoes, tomato paste, red wine, beef stock, and dried Italian herbs. Cover and cook on low for 8 hours or high for 4 hours, until the brisket is fall-apart tender. Remove the brisket, shred it using two forks, then return it to the sauce in the slow cooker. Stir well to combine. Meanwhile, cook your pasta separately according to packet instructions. Drain and add it to the slow cooker. Stir through the brisket sauce until well coated. Dish it up with a generous sprinkle of grated Parmesan and fresh parsley. Once melted add the garlic and tomato purée, sauté for 2 minutes. Now add the peppers and sauté further for 2-3 minutes. Next add the dry seasonings, and sauté for another 2 minutes. Step 2 - Bring the heat down to low, stir in the cream and add the shrimp. Gently stir and cook for 4-5 minutes or until the shrimp has cooked through. Step 3 - Add lemon juice and stir. Add 2-3 tbsp of water to the meat mixture to keep it extra juicy, then mi› well. Mix together the tomato paste, heavy cream, water, garlic powder, oregano, salt, and pepper. Line a baking dish with cabbage leaves. Spread a layer of the meat mixture on top, then cover with more cabbage leaves.
