Based on my post last night regarding the baking soda/beef combo, we did an experiment (for a much longer video coming soon): We started with 2 equal lbs of ground beef. In one of them we added 1/4 teaspoon baking soda and allowed it to sit for 15 minutes. The other was left as is. The beef cooked with the baking soda browned better, retained 25% more moisture and was more tender.
