This is a great Fermented Hot Sauce! It is loaded with gut-healthy probiotics, tangy flavor, and you control the heat level by choosing your peppers!! 🌶️ FERMENTED HOT SAUCE RECIPE: (Quart Jar Batch) Ingredients: •10–12 hot peppers (jalapeño, serrano, cayenne, or a mix) •1 medium tomato, chopped •½ medium onion, chopped •4–5 garlic cloves •2 cups (475 g) filtered water •2 ½ tsp (14 g) fine sea salt (~3% brine) Instructions: 1. Add peppers, tomatoes, onion, and garlic to a clean quart jar. 2. Dissolve the salt in water to make your brine. Pour brine over veggies until everything is fully submerged, removing air bubbles. 3. Place a Pickle Pebble (a glass weight used for home fermentation) on top to weigh down the veggies. Top the jar with a Pickle Pipe (a one-piece, waterless airlock that functions as a fermenting lid for mason jars) and secure with a rust-proof Tough Band (a brand of reusable, rust-proof mason jar bands made of durable plastic, designed to create a leak-proof seal for fermenting and food storage). 4. Batch cooking your own sauce and freezing some will keep you from buying overpriced jars of sauce at the store when you’re in a pinch. This is about 10 pounds of canned San Marzano tomatoes with some onion, carrot, celery and garlic (I had to use elephant garlic since all the garlic at my store was gross). Start with extra virgin olive oil in a pot and cook down your mirepoix for 3-5 minutes. Add in your garlic and cook another couple minutes. Add in tomato paste (I used a 4oz tube). Cook another 3 minutes. Add in your tomatoes, fresh basil, fresh oregano, parmigiano reggiano rinds (the end of the cheese block, it becomes soft and adds umami to the sauce) salt and pepper. Simmer this for 3-8 hours (longer you go the more concentrated the flavor and the sauce will reduce some). If you have a blender or food processor, blend up all of the sauce into a purée. This isn’t necessary, but it will be a better texture if you do this. Add in some extra virgin olive oil and more salt and pepper if you need it. Transfer to freezer safe containers and store.

🔥 Fire Cider 🔥 Now is the time to start preparing your remedies so they’ll be ready for cold and flu season! Fire cider is a powerful immune-boosting, digestive-supporting, energy-giving, circulation-stimulating, respiratory-clearing, anti-inflammatory, and antioxidant tonic. Here's my recipe for fire cider using a half-gallon mason jar: Ingredients: - 1 red onion 🧅 - 1 large orange 🍊 - 1 lemon 🍋 - 1 head of garlic 🧄 - 2 ½ jalapeños 🌶 - ½ tsp cayenne pepper 🌶 - 1 tsp peppercorns - 10 cloves - 1 bunch of rosemary 🌿 - 1 bunch of thyme 🌱 - 1 handful of ginger 🫚 - ½ tsp turmeric - 1 or 2 cinnamon sticks - Organic, raw, unfiltered apple cider vinegar (ACV). If you can’t find this, use any apple cider vinegar you have access to. Instructions: 1. Chop your produce and add it to your mason jar as you go. 🍶 2. Add the rosemary, thyme, peppercorns, dried cayenne peppers, cloves, and cinnamon sticks. 3. Fill your jar to the top with ACV. 🍎 4. Place a sheet of parchment paper between the jar and the lid to prevent the ACV from corroding the metal lid. If using a plastic lid, you can skip this step. 5. Let your fire cider sit on the counter or in the pantry for 4-6 weeks, gently shaking it daily. 🕰 6. Open the lid every couple of days to check the level of your ACV. If it’s not filled to the top, add more ACV. 7. After 4-6 weeks, strain the mixture and squeeze all the cider from the produce. 8. Optionally, add honey 🍯, maple syrup 🍁, agave, or your preferred sweetener. You can take a tablespoon each morning 🌞 or use it when you’re feeling under the weather, taking it 2-3 times a day. 🌿💧

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 1,7kg bone-in brisket 1 large onion, roughly chopped 2 tsp rajah curry powder Salt and pepper, to taste 𝐌𝐞𝐭𝐡𝐨𝐝 Add the brisket to your pot, then add enough water to cover it. Season with curry powder, salt, and pepper. Close with a lid and cook for 2-3 hours, until the meat is soft and tender. Add the onion halfway through the cooking time. 𝓝𝓸𝓽𝓮𝓼! If you are cooking outside, constantly monitor the fire/coal and add water when needed to avoid burning the meat. Cooking time may vary based on the thickness of the meat, the size and type of the pot, and the coal temperature, so keep that in mind. If you prefer it super tender, then cook it for longer. If you are using a stove, cook it over medium-high heat. Frequently check the water levels to avoid burning the meat.
